Whole Grain Pancakes

This is our staple weekend breakfast pancakes. Kids really prefer this over restaurant pancakes.
Ingredients:
2 eggs
2/3 cup flax seed meal
2 tablespoons baking powder
2 tablespoons sugar
1 cup flour
1 cup whole wheat flour
1/2 teaspoon salt
2 cups milk
1/2 teaspoon vanilla extract
Directions:
1. Beat eggs until fluffy.
2. Add all other ingredients and mix gently. It's ok if it's a little lumpy.
3. Heat griddle, and pour some of the batter on. Bake 2-3 minutes on each side until golden.
