Whole Grain Apple Cinnamon Muffins

these are a muffin recipe I got from the back of Bob's Red Mill Apple Cinnamon and Grains Cereal. I changed it up a little to make it with less sugar and more protein
Ingredients:
2 cups oats
1 cup whole wheat flour
1/2 cup soy flour
1/2 cup all-purpose flour
1/4 cup brown sugar
1/2 cup splenda sugar substitute
1/3 cup all-bran cereal
1/3 cup bob's red mill apple cinnamon and grains cereal
2 tablespoons baking powder
1 teaspoon salt
2 eggs
1/2 cup fat free sour cream
1 cup skim milk
1/2 cup canola oil
1/3 cup honey
1 apple (grated)
Directions:
1. mix dry ingredients.
2. Mix wet ingredients in seperate bowl.
3. Add to dry ingredients.
4. Stir quickly until dry ingredients are just moist. Batter will be thick.
5. Fill muffin cups 2/3 full.
6. Bake for 15 minutes at 400 degrees.
7. makes aprox 36 muffins.
