A great way to bring in some holiday cheer! For a non-alcoholic version, substitute white grape juice in place of the white wine.
Ingredients:
8 cups water
2 (12 ounce) cans frozen apple juice concentrate, thawed
1 (12 ounce) can frozen orange juice concentrate, thawed
1 (11 1/2 ounce) can apricot nectar
1 (6 ounce) can frozen lemonade concentrate, thawed
1/2 cup light brown sugar, firmly packed
15 whole cloves
6 cinnamon sticks (3-inch)
3 cups good sweet white wine (a riesling is nice)
apple, slices (for garnish) (optional)
cheesecloth (optional)
kitchen twine (optional)
Directions:
1. In a large pot, place water, apple juice concentrate, orange juice concentrate, apricot nectar, lemonade concentrate, and brown sugar.
2. Tie cloves in a small piece of cheesecloth and secure with kitchen twine and drop in the pot, leaving a piece of twine where you can fish it out or place them in a large tea ball (this prevents you from having to strain the wassail later).
3. Tie cinnamon sticks together with some kitchen twine, leaving some of the twine where you can fish it out.
4. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, uncovered, stirring occasionally.
5. Remove cloves and cinnamon from wassail.
6. Add wine to wassail, and stir gently.
7. Garnish with apple slices, if desired.
8. Keep warm and serve from pot or you may decide to serve from the warm setting on a crockpot.
