White Whole Wheat Bread

Whole-grain bread, lightened slightly
Ingredients:
7 c white whole wheat flour
5 tbsp vital wheat gluten
1/2 c honey
1 tbsp salt
2 tbsp yeast
1/2 c. egg substitute
1/4 c canola oil
1 c hot water
3/4 c warm water
1 tsp sugar (for yeast)
Directions:
1. Dissolve yeast in 3/4 c warm water w/ 1 tsp sugar
2. Stir all dry ingredients together
3. Add all liquid ingredients
4. Add yeast mixture
5. Knead until elastic
6. Let rise twice
7. Form into 24 (about 65-70g of dough each) rolls or 2-4 loaves
8. Let rise again and bake at 350 degree for about 30 minutes
