White Turnip Soup

An unusual but tasty way to get anyone to eat turnips and a great way to get rid of stale bread. For those that want to cheat croutons can be subbed. This is a recipe from colonial times and is quite good. Addition of a good smoked bacon or smoke flavoring is an interesting spinoff.
Ingredients:
4 medium sized white turnips
1 large onion
3 tbl butter
salt and pepper to taste
3 slices dry bread or 2 cups of flavored or plain croutons (for those that want the easy way out)
2 egg yolks
1/2 cup cream
parsley
Directions:
1. peel, slice and coarsely chop the turnips and onions
2. cook slowly in butter for 5 minutes
3. add 6 cups of boiling water (dechlorinate city water by letting stand overnight uncapped), and bread or croutons
4. simmer the soup for 30 minutes
5. remove from the heat
6. puree the soup
7. add salt and pepper to taste
8. return to the heat and add egg yolks beaten well with the cream and stir blending well
9. garnish with fine minced parsley
10. serve with crusty bread
11. Any root vegetable will work here as well as acorn squash, pumpkin etc.
