White Squash Beignets

I can't think of a better way to prepare squash, not a diet recipe!!!!
Ingredients:
4 medium white squash
1 cup flour
1 large egg
1 cup sugar
1 teaspoon vanilla
oil (for frying)
Directions:
1. Peel squash and cut into small cubes.
2. Boil in water until very very tender, drain well.
3. Mash squash with a fork or large spoon, add beaten egg, sugar, flour and vanilla.
4. Make into patties about the size of your palm and fry in 1/2 inch of oil until light brown.
5. Serve hot.
