I love white pizza made with ricotta cheese and this recipe qualifies! I'm not sure where I got the recipe, but I'm glad I found it. Easy and quick, you will like it too, I'll bet!
Ingredients:
1 prebaked pizza crust (such as boboli)
1 cup ricotta cheese
1 garlic clove, finely chopped (or more to taste)
basil leaves, to taste
3/4 cup mozzarella cheese, grated
Directions:
1. Preheat oven to 400 degrees F.
2. Spread ricotta cheese evenly over the prebaked crust.
3. Top with finely chopped garlic clove and julienned basil leaves. To julienne the basil leaves, make a pile of them and roll up like a cigarette. Then thinly slice across the roll of leaves.
4. Top with mozzarella cheese sprinkled over.
5. Bake in preheated oven until bubbly and hot, about 20-25 minutes.
6. NOTE: An alternate topping would include: sliced roma tomatoes, vegetables of choice including mushrooms, and sesame seeds. Olives, too, if desired. Acutally you may create your own topping according to your own preferences. I like to add just sliced roma tomatoes to the garlic and basil topping, for instance.
