White Chocolate Raspberry Oatmeal

Ingredients:
1 cup steel cut oats
2 cups 100% juice raspberry juice blend
1 cup water
about 1 cup milk or half and half
dash of salt
1t vanilla or almond extract
2t raspberry all fruit spread
1/4 cup white chocolate chips
Directions:
1. Combine oats, juice, and water in medium saucepan.
2. Bring to a boil, reduce heat and simmer 20-25 minutes, without stirring.
3. Stir well and add salt, extract and milk/half and half to thin and continue to cook, as needed to reach desired consistency.
4. Remove from heat.
5. Spoon oatmeal into serving bowls and add chips and stir briefly. (many of the chips will melt)
6. Add a rounded teaspoon full of the fruit spread to each bowl, then gently swirl into the oatmeal just before serving.
