WHITE CHOCOLATE CHEESECAKE WITH SHORTBREAD CRUST This recipe came from an estate sale. I obtained it when I purchased the family collection from the Abrams Estate in Mesquite, Texas in 1998.
Ingredients:
1-1/4 cups shortbread crumbs
1/4 cup ground almonds
2 tablespoons sugar
1/8 teaspoon almond extract
3 tablespoons melted butter

6 ounces white chocolate chopped
32 ounces cream cheese softened
5 large eggs at room temperature
3/4 cup granulated sugar
3 tablespoons flour
1 teaspoon vanilla extract
1/4 teaspoon almond extract
Directions:
1. Mix crumbs, almonds, sugar, extract and butter then press into bottom of spring form pan.
2. Bake at 400 for 6 minutes then remove from oven and cool.
3. When cool grease sides of the pan lightly then melt and cool chocolate.
4. Mix together cream cheese then add eggs one at a time then mix in sugar, flour and extracts.
5. Stir 1 cup mixture into chocolate then mix all.
6. Pour into pan and bake at 325 for 40 minutes.
