This recipe was one of the first dishes that my mother in law made for me while visiting them in Minnesota. Delicious! It is now a winter time favorite. The herbs and spices can be adjusted for your tastes, and fresh herbs can be substituted depending on availability. Serve with sour cream and crusty Baguette.
Ingredients:
4 cups chicken (cubed)
2 tablespoons olive oil
1 cup bell pepper (chopped)
1 cup yellow onion (chopped)
5 garlic cloves (minced)
3 (16 ounce) cans cannellini beans
2 cups chicken broth (i sometimes sub 4 bullion cubes in 2 c. water)
1 (4 ounce) can green chilies
1 tablespoon fresh cilantro
1 tablespoon dried basil
1/8 teaspoon ground cloves
1/2 teaspoon cumin
1/2 teaspoon black pepper
1 1/2 teaspoons dried parsley
1/2 teaspoon cayenne pepper
8 ounces sour cream
2/3 cup heavy cream
Directions:
1. Cook chicken in olive oil in a large pot.
2. Add onion, bell pepper, and garlic and cook until tender.
3. Add the rest of the ingredients except sour and heavy cream and simmer for at least 15 minutes to let flavors blend (the longer the better).
4. Add heavy and sour cream and simmer for an additional 5 minutes.
5. Serve with sour cream and crusty baguette.
