This is my version on white chili. I love to use lean ground meats, especially chicken and turkey. Turkey can also be used in this recipe. We love this served with a dollop of sour cream and some shredded cheese. Read more . I like to use whole grain tortilla chips for dipping! YUM!
Ingredients:
1 lb. of lean ground chicken breast
1/2 lg onion chopped
2 cloves of garlic minced
1 can (4.5 oz) chopped green chilies
3 c. fat free /reduced sodium chicken broth ( i like college inn)
1 can of small white beans rinsed and drained
1 pk. of mccormick white chicken chili mix
1 c. frozen baby white corn
salt and pepper to taste
2 tblspns. of olive oil
Directions:
1. Sautee chopped onion in olive oil until tender about 5 minutes
2. Add raw ground chicken and minced garlic.
3. Add salt and pepper to taste.
4. Cook unitl meat is no longer pink and broken up.
5. Add can of green chilies, chicken broth, beans, chili mix, and frozen corn.
6. Cook for another 35-40 min.
7. Serve with sour cream, shredded cheese, tortilla chips and or corn bread.
8. Enjoy!
