This is a great recipe for a wintery evening, although it takes some preparation. Keep in mind the white cake has a 25 minute baking time, but can be made ahead. The sauce should be made just prior to serving and served hot.
Ingredients:
----- white cake ----- makes two 9-inch round pans
2 1/4 cups softasilk cake flour
2 1/2 tsp double-acting caking powder
1/2 tsp salt
1 1/4 cup sugar
1/2 cup butter
1 cup milk
1 tsp vanilla
4 egg whites
----- chocolate fondue sauce
2 tb flour
2 cup milk
1 cup sugar
4 tb cocoa
1 tb vanilla
1 tb butter
1 pinch salt
Directions:
1. Preheat your oven to 375F. All ingredients should be at room temperature.
2. Sift together the cake flour, baking powder and salt.
3. Cream the sugar and butter until the mixture is creamy.
4. Combine the milk and vanilla.
5. Add the sifted, dry ingredients to the creamed butter mixture in three parts, alternating with the milk and vanilla mixture. Stir until the batter is smooth.
6. Whip until stiff, 4 egg whites. Gently fold them into the batter and pour into two 9-inch baking pans sprayed with a baking prep spray.
7. Bake at 375 for 25 minutes.
8. Remove and allow to cool 5 minutes before turn the cakes out onto a cooling rack.
9. While the cakes are cooling, mix the dry ingredients for the Fondue sauce in a small pan and add a small amount of water - enough to make a thick paste. Add the milk and heat.
10. Do not boil.
11. When warm, add the butter and vanilla.
12. Cut the cake into individual servings, cover with the hot fondue sauce. Add a scoop of vanilla ice cream.
13. For a better presentation, you might use square baking pans.
14. Note: The white cake recipe was originally from Joy of Cooking. I'm not sure where the Chocolate Fondue sauce recipe came from originally.
