A thick soup. For extra flavor and salt, use broth instead of water. It's good garnished with grated cheese.
Ingredients:
2 cups beans, cannelini, white kidney
2 cups spinach, cooked, drained
1 tablespoon olive oil
1/2 cup onion, chopped
2 cloves garlic, minced
1/4 teaspoon pepper
2 cups water
Directions:
1. Saute the onion and garlic in olive oil
2. Add the other ingredients
3. Simmer for 20 minutes
