White Bean Salad is easy enough to make during the week and pretty enough for a dinner party. The combination of colors are simply beautiful in a glass or crystal bowl.
Ingredients:
1/4 cup olive oil
3 garlic cloves, minced
2 (15 ounce) cans cannellini beans, drained and rinsed
1/2 cup tomato, diced
1 teaspoon salt
1 teaspoon black pepper
1/2 cup fresh basil leaf, roughly chopped
Directions:
1. In a small saucepan, heat olive oil and cook the garlic for 1-2 minutes. In a salad bowl, combine beans, tomato, salt, black pepper and basil leaves. Pour warm garlic oil over the salad and combine. Chill for at least 30 minutes.
