Make Ahead
Ingredients:
1 (15.8-ounce) can great northern beans, drained
2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
2 teaspoons balsamic or red wine vinegar
1 teaspoon olive oil
1/2 teaspoon dry mustard
1/2 teaspoon pepper
1/4 teaspoon salt
2 tablespoons minced fresh parsley
Directions:
1. Combine first 7 ingredients in a medium bowl. Mash until mixture is smooth, using a potato masher; stir in parsley. Transfer to a small serving bowl; cover and chill at least 1 hour. Serve with fat-free pita chips or raw vegetables.
