White Bean, Broccoli, Potato, Rosemary Stew

A savory stew for fall and winter.
Ingredients:
1 tbs. olive oil
6 cloves garlic, minced
1 onion, diced
4 medium potatoes, diced
16 ounces broccoli, chopped
30 ounce white kidney beans
1 tbs. rosemary, chopped
2 quarts organic vegetable broth
Directions:
1. Saute garlic and onions in olive oil until they begin to turn golden.
2. Add potatoes and broth, bring to a simmer. Simmer for about 15 minutes.
3. Add broccoli, white beans (drained and rinsed), and rosemary. Add additional water if necessary. Simmer for an additional 10 minutes or until potatoes are tender. Season with salt and pepper to taste.
4. Serve.
