White Bean And Roasted Garlic Spread

If you love garlic you will like this dip. It may seem like alot of garlic to use in this recipe but don't worry roasting the garlic mellows the flavor. Prep time includes roasting the garlic.
Ingredients:
2 heads of roasted garlic
19oz can white beans, drained and rinsed
1/2tsp cumin
1tsp paprika
1/3c olive oil
2t lemon juice
cayenne pepper, to taste
3t chopped parsley
salt and pepper to taste
Directions:
1. ROASTING GARLIC: Cut tops from 2 whole heads of garlic to expose cloves. Place garlic in goil and sprinkle with 2T olive oil.
2. Wrap and bake at 400F (205C) 30-35mins.
3. Place garlic and beans in food processor. Sprinkle with cumin, paprika, olive oil, lemon juice and cayenne pepper. Process until smooth. Add water if too thick. Stir in parsley and salt and pepper to taste.
