Whiskey Grapefruit Glazed Smoked Salmon Crostini

Ingredients:
12 ounces smoked salmon
1/2 cup grapefruit, peeled, sectioned and roughly chopped
2 tbls capers
4 oz cream cheese, softened
4 oz mascarpone, softened
leaves from 1/2 bunch of fresh thyme, finely chopped
1 tsp finely ground chipotle powder
2 tbls good ev olive oil
2 baguettes, cut on the bias into 1/4″ slices.

1/2 cup scotch whiskey (preferably an “islay” for its smoky flavor but any good scotch will do.)
1/4 cup grapefruit juice
1/4 cup honey
Directions:
1. In a small pot, reduce the Whiskey, Grapfruit Juice and Honey until it becomes like thin syrup. Let cool slightly. It will thicken a little.
2. Fit a cooling rack on top of a sheet pan and place the Salmon Strips on the rack. Brush the Salmon generously on all sides with the Grapefruit-Scotch glaze. Cover loosely with foil and refrigerate for 30 minutes.
3. When Ready: Slice Salmon into 3/4-1″ pieces and set aside.
4. In a small bowl, whip the Cream Cheese and Mascarpone together; stir in chopped thyme. Set aside.
5. In a separate bowl, gently toss the chopped Grapefruit with Chipotle Powder Set aside.
6. Brush bread slices with olive oil and toast or broil both sides until lightly golden and crisp. Let cool to room temperature.
7. Spread toasts with Cheese mixture. Divide Salmon evenly among Toasts, piling loosely. Top with Chipotle Spiced Grapefruit and a few Capers. Serve immediately.
