Whipped Sweet Tater Bake

This is a very quick and easy recipe on a Thanksgiving classic. You can make it even easier by cooking in the microwave. Assemble as instructed without topping with marshmallows. Microwave on high for 8-10 minutes or until heated through, stirring after 5 minutes. Remove from microwave and top with marshmallows. Let stand for 3 minutes or until marshmallows begin to melt.
Ingredients:
3 (15 ounce) cans sweet potatoes, drained
1/4 cup butter, melted
1 teaspoon cinnamon, ground
1/2 teaspoon salt
1/4 teaspoon nutmeg, ground
3 cups miniature marshmallows
Directions:
1. Preheat oven to 350°F Beat sweet potatoes, butter, cinnamon, salt and nutmeg in medium bowl with electric mixer on medium speed until well blended.
2. Spoon into lightly greased 1 1/2 quart baking dish; top with the marshmallows.
3. Bake 15-20 minutes or until sweet potato mixture is heated through and marshmallows are lightly browned.
