This puts a sweet potato crop to delicious use. I've used butternut squash instead of sweet potatoes with equally delicious results.
Ingredients:
2lbs sweet potatoes,peeled and cubed(about 3 large
3 med. parsnips,peeled and sliced
1/2c dried chopped apricots
1c unsweetened apple juice or apple cider
2tbs butter,melted
1/2tsp salt
1/8 tsp pepper
Directions:
1. Place sweet potatoes,parsnips and apricots in a large saucepan; cover with water.
2. Bring to a boil. Reduce heat;cover cook 10 to 15 minsor till vegetables are tender.
3. Meanwhile,in a small saucepan,bring apple juice to a boil;cook till reduced to 1/4c.
4. Drain vegetable mixture;cool slightly. Transfer to food processor. Add butter,salt ,pepper and reduced cider. cover,process 1 to 2 mins till well blended.
