I was looking for a recipe for wheat and milk free corn cakes for my granddaughter and found this.
Ingredients:
2 cups yellow cornmeal
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups soymilk
2 eggs
1 teaspoon vanilla
3 tablespoons melted butter
Directions:
1. Combine dry ingredients in a bowl. Stir liquid ingredients together in a separate bowl. Stir liquids into dry. Pour 1/4 cup of batter on hot greased griddle. Fry until brown on one side and then flip and brown second side. If your batter is too thick add a little more soymilk. If it is too thin, add a littie cornmeal. Serve hot and top with butter, syrup, or whatever you like.
