This is an awesome recipe. I obtained it when I inherited the family collection in 1980. It's my Aunt Maggie's recipe and the notes on her card state this came from a 1950's Quaker Oats cookbook.
Ingredients:
2 cups ground oats
2/3 cup sugar
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 cup shortening
2 medium eggs
1 teaspoon vanilla
1 cup applesauce sweetened
1 cup raisins optional
Directions:
1. Grind oats by running through a blender or food processor.
2. Combine ground oats, sugar, salt, soda and spices in mixing bowl.
3. Add shortening, eggs and vanilla then beat until smooth.
4. Stir in applesauce and raisins then pour batter into greased square baking pan.
5. Bake in preheated 350 oven for 40 minutes then cool completely.
6. Cover pan and store one day before serving.
