Ingredients:
1 cup egg substitute
1 cup green pepper, chopped
1 small onion, chopped
1/2 cup cherry tomatoes, quartered
2 ounces parmesan cheese
Directions:
1. Spray small heatproof omelet skillet with cooking spray oil. Set burner to medium.
2. Saute onions & peppers for 3 minutes, then add tomatoes. Cook another minute or so.
3. Pour in egg substitute & sprinkle with Parmesan cheese (can be blended into eggs). Season with salt, pepper, garlic powder, cayenne, etc. to taste.
4. Heat boiler of oven. After fritata sets up on stove, transfer to oven for a few minutes until top is lightly browned & puffy.
5. Serve with toast.
