Western Black Bean Soup

It's getting to be that time again, with the weather cooling down, get the soup pot out and make a big batch of your favorite soup,stew or chili. This is one of my famiy's favorites . Good served with grated cheese, sour cream, chili powder, chopped onion and biscuits.
Ingredients:
1 cup dried black beans
4 cups water
4 slices bacon, diced
1/2 cup chopped onion
1/2 cup chopped celery
1 clove garlic, minced or pressed
1 tsp. cumin
salt to taste
1 tbsp. red wine vinegar
2 hard-cooked eggs, chopped
parsley sprig
lemon slices
freshly cracked black pepper
Directions:
1. Wash beans. Cover with the water. Bring to a boil. Simmer,covered, for 2 min. Remove from heat. Let stand I hr.
2. Fry bacon. Reserve half for the garnish. In 2 Tbsp. of the bacon fat,
3. saute onion, celery and garlic. Add vegetables to soaking beans. Season with cumin.
4. Cover and simmer for 2 hrs. or until beans are tender. (Make sure
5. beans are always covered with water.)
6. Puree beans in a food mill or processor. Thin with the broth until
7. consistency is to your liking. Heat until steamy. Stir in salt and vinegar.
8. Serve in bowls. Garnish with reserved bacon pieces, chopped
9. eggs, parsley and lemon slices.
10. Sprinkle with black pepper
