Wendy's Smoked Salmon Chowda

This recipe was an entry in our Soup and Stew contest. I LOVED it! I would recommend doubling the recipe but I'm posting it as a single batch.
Ingredients:
1 cup smoked salmon, chunked
2 tablespoons butter
1/2 cup onion, chopped
1/4 cup celery, sliced
1 -2 cup potato, cooked and diced
2 tablespoons flour
1 1/4 cups chicken stock
1/4 cup sour cream
1 teaspoon fresh dill, minced
1/8 teaspoon pepper
1 tablespoon parsley, chopped (optional)
Directions:
1. Saute onion and celery in butter.
2. Stir in flour, add stock and potatoes and cook over medium heat, stirring constantly until boiling point.
3. Add sour cream, dill, pepper and salmon.
4. Heat 2-3 minutes, stirring constantly.
5. Add parsley before serving.
