I had almost forgotten this little gem, when my mum decided to make it up for brunch. It is great served over crispy French sourdough slices and and some bangers on the side.
Ingredients:
3 tablespoons sweet cream butter
1 pound of stilton cheese (or any that you prefer, goat cheese works nicely as well)
1/2 cup of half and half (or a good pub ale)
3 large eggs or 4 small ones, beaten
1/2 teaspoon salt
1 teaspoon worcestershire sauce
1/2 teaspoon mustard
Directions:
1. Melt the butter, add the cheese which has been cut into small pieces in a double broiler stirring constantly until melted.
2. When cheese is melted add the salt, mustard, Worcestershire and then gradually pour in the half and half stir until well mixed. Next add the beaten eggs slowly stirring until thick and starts to turn to a soft scramble. Serve immediately on crisp toast
3. Beer may also be substituted for the half and half for a bit of a different flavor.
