i made these as a treat to welcome my parents home from a trip... they both kept coming back to the kitchen saying i'm just going to have one more... if you manage to keep some around for a few days, fear not - they stay fabulously chewy and delicious! Cooking time includes minimum chilling time.
Ingredients:
2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
2 teaspoons ginger
1/2 teaspoon clove
1/2 teaspoon allspice
1/2 teaspoon salt
1/2 cup shortening, room temperature
1/4 cup butter, room temperature
1 egg
1/3 cup molasses
3/4 cup dark brown sugar, firmly packed
1/2 cup granulated sugar
Directions:
1. Combine flour, baking soda, spices, and salt in a small bowl. Whisk together.
2. Combine brown sugar, shortening, and butter. Beat well.
3. Add egg and molasses. Beat well.
4. Add flour mixture. Mix until combined.
5. Chill dough for at least 30 minutes, preferably longer.
6. Preheat oven to 350 degrees.
7. Form dough into 1 1/4 inch balls. Roll in granulated sugar and place on cookie sheet.
8. Bake at 350 degrees for approximately 11-12 minutes, or until cookies are cracked slightly on top but are still very soft to the touch.
9. Allow to cool 2 minutes on cookie sheet, then move to rack to cool completely before storing.
