Chili that's easy to eat and easy on the pocket. Cooking it in the crockpot makes it ready when you are.
Ingredients:
1 lb ground beef or ground turkey or mixture of both
1/4 cup all-purpose flour
4 teaspoons chili powder
1 tablespoon crushed red pepper
1 tablespoon dried minced onion
1 tablespoon dried, minced garlic
2 teaspoons brown sugar
2 teaspoons ground cumin
2 teaspoons dried parsley
2 teaspoons salt
1 teaspoon dried basil
1/4 teaspoon ground black pepper
1 can (14 ounces) diced tomatoes with green chiles, undrained
1 can (14 ounces) red kidney beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 cup cheddar cheese, shredded (optional)
Directions:
1. Brown ground beef in large skillet, drain.
2. Place beef and the rest of the ingredients into the crock pot. Give it a quick stir and cover. Cook on low for 4-6 hours or high 2-3 hours.
3. For those with kids that are a little suspicious of beans, I used to pulse the beans in the blender and add it to the chili. It's also a good way to thicken it.
4. Top each serving with a bit of the cheese.
5. Enjoy!
