Light, fresh salad that you can whip up in minutes. You can substitute Romaine, red leaf or spinach for the green leaf. For more nutrients avoid iceberg lettuce.
Ingredients:
1/2 head green leaf lettuce
3 spring onions
2 tablespoons extra virgin olive oil
2 teaspoons white balsamic vinegar
1/2 cup crouton (optional)
2 tablespoons fresh parmesan cheese, grated
1/8 teaspoon fresh ground pepper
Directions:
1. Clean lettuce and break into bite-size pieces.
2. Chop spring onion and mix with greens.
3. Add olive oil and vinegar, adjusting amount to desired taste.
4. Add parmesan cheese.
5. Add croutons and pepper as desired.
