Watermelon Upside-down Cake |

Unusual but good. From Cooking Pleasures Mag (june/july 08) Ingredients:
2 tbs plus 1/2c butter, softened and divided |
1/2 c packed brown sugar |
1 c diced seedless watermelon (1/2 in) |
2/3 c sugar |
3/4 tsp vanilla extract |
1 egg, beaten |
1 1/4 c flour |
2 tsp baking powder |
1/8 tsp salt |
1/2 c milk |
Directions:
1. Heat over to 350F. Melt 2 tbs butter; pour over bottom of a 9in round cake pan. Sprinkle with brown sugar; top with watermelon 2. Beat remaining 1/2 c butter, sugar, and vanilla in large bowl at med speed until blended. Beat in egg. 3. Combine flour, baking powder and salt in a med bowl. Beat into sugar mixture alternately with milk, beginning and ending with flour. Spread over watermelon 4. Bake 30-35 mins or until cake pulls away from sides of pan, top is golden brown and toothpick inserted in center comes out with a few small dry crumbs attached. Cool on wire rack 5 mins. Turn out onto serving platter; cool completely. |
