Watermelon Sherbet

This recipe was published in the Slim Lines column of Thursday magazine dated August 16th to 22nd'2007. It's the perfect thing for summer! Try it :)
Ingredients:
2 cups watermelon, cubed and seeded
1/2 cup sugar
1 tablespoon gelatin, unflavoured
1/3 cup cranberry juice cocktail
Directions:
1. Process watermelon and sugar in a blender or food processor until smooth.
2. Mix gelatin and the cranberry juice in a small saucepan.
3. Allow to stand for five minutes.
4. Stir continuosly on low heat until the gelatin is dissolved.
5. Add to the melon mixture.
6. Pour into an 8X8X2 inch baking pan.
7. Cover and freeze until firm (about 2 hours).
8. Remove from freezer.
9. Break up the mixture and put in a chilled mixer bowl.
10. Beat using an electric beater on medium-high speed or until the mixture is fluffy. Return to pan.
11. Cover and freeze for 6 hours or until firm.
12. Enjoy!
