Ingredients:
2 tablespoons rice vinegar
2 1/2 teaspoons sugar
2 cups watermelon, diced and seeded
2 cups cucumbers, diced
1/2 cup cilantro, chopped
1/4 cup dry-roasted unsalted peanuts
Directions:
1. In a salad bowl combine vinegar and sugar and stir until sugar dissolves.
2. Add watermelon, cucumber and cilantro and toss.
3. Top with peanuts and toss again.
