This recipe is from Rozanne Gold in The Oprah Magazine Cookbook. Adjust the sweetness by experimenting with the amount of honey.
Ingredients:
1 1/2 lbs sliced seedless watermelon, rind removed
1 lemon, zest of
3/4 cup fresh lemon juice
1/2 cup honey
1 1/2 cups cold water
1 lemon, thinly sliced, for garnish
Directions:
1. In a food processor, puree the watermelon until very smooth.
2. Set a mesh strainer over a bowl and pour the pureed watermelon through it.
3. Stir the pulp to let as much liquid as possible drain into the bowl.
4. Discard the pulp.
5. Pour the watermelon juice into a large pitcher and add the lemon zest.
6. Set aside.
7. In small bowl, whisk together the lemon juice and honey until honey dissolves.

10. Serve over ice and garnish with lemon slices.
