Watermelon Fruit Salsa

A fresh summertime side. Use fruits as indicated or any of your personal favorites. Serve over a whole grain (brown rice, bulgar wheat), over a salad. Great over broiled/grilled fish or chicken. So delicious it can be eaten by itself or with chips.
Ingredients:
2 cups watermelon, seeded, coursely chopped
(make bigger watermelon cubes if serving as a side salad)
1 jalapeno pepper, seeded and minced
1/2 sweet onion
2 tbs fresh cilantro
2 c. crushed pineapple, no sugar added
1 cucumber, seeded and finely chopped
1 lime, juice and the zest
2 tbs balsamic vinegar
Directions:
1. Combine all ingredients.
2. Chill for at least 3 hours to allow flavors to marry.
3. Stir before serving.
4. Serve as a dip w/tortilla chips.
5. Use as a topping for grilled fish/chicken.
6. Eat it as is because it is so delicious and fresh!
