Perfect for a light and refreshing breakfast.The strawberries add a nice acidity to the watermelon.Watermelon seeds are full of fiber,protein,and fatty acids,so they are left in to make the juice more nutritious.Ideally,this should not be strained so you can get all of these benefits.If your blender is just very low-power and cannot completely grind the seeds,grind them as much as you can and pass through a large,not fine meshed,strainer to catch the larger bits.Originally from THE FOOD DOCTOR by Edgson and Marber.
Ingredients:
2 lbs watermelon with seeds, cubed
2 cups fresh strawberries, de-stemmed
Directions:
1. Place watermelon in a blender and blend on high until the seeds are completely pulverized.You may do this in batches if necessary.
2. Place the strawberries in the blender with a little bit of the pureed watermelon and blend until smooth.
3. Combine both juices in a pitcher and mix well.Serve immediately.This juice does not keep well.
