This fluffy salad is great as a side or as a dessert. It's nice sweet flavor compliments a picnic lunch! Ingredients:
1 - 4 serving package pistachio flavored instant pudding |
1-1/2 cup pinapple tidbits, undrained |
(1-1/3 will equal with tibits and juice combined) |
1 cup mini marshmallows |
1/3 cup pecans, finely chopped |
2 cups cool whip |
alternative: you can also prepare pudding as directed on package, use 1 cup of pinepple, drained and 1 cup cool whip for less sweetness. be sure to refrigerate an hour longer |
Directions:
1. Mix pudding, pineapple, marshmallows and pecans together, until pudding is a bright green.
2. Gently fold in Cool Whip.
3. Refrigerate for at least 2 hours, 3 hours if using alternative method.
4. Enjoy!
