I found this recipe my mom gave me years ago. This cake was one of my very favorites growing up. I don't know why but my mom made it for about every picnic we went too. I remember being so excited for dessert. I have never made this cake myself but talked my daughter into letting me make it for her 16th birthday on Feb. Read more . 16, 2009! She is not a big chocolate lover and she loves soda. I will take a picture and post it.
Ingredients:
1 pkg. white cake mix
3/4 cup cooking oil
3 eggs
1 cup 7-up
1 (3 oz.) pkg. instant pistachio pudding
1 cup chopped pecans
1/2 cup coconut
icing
2 env. dream whip( 3 oz)
1 1/2 cup milk
1 pkg. instant pistachio pudding
1/2 cup coconut
3/4 cup chopped pecans
Directions:
1. Combine first 7 ingredients in order given.
2. Mix and pour into 9x13 inch greased and floured pan.
3. Bake 45 minutes or until done in 350* oven.
4. Combine icing ingredients; beat until thick.
5. Spread on cool cake.
6. Sprinkle with nuts and coconuts.
