This simple watercress salad celebrates all the flavors that define Spanish cuisine.
Ingredients:
1 medium garlic clove, minced
2 tablespoons sherry vinegar
1/4 cup extra-virgin olive oil
2 bunches watercress, stemmed and washed
1/2 cup slivered almonds, toasted
4 ounces manchego cheese, shaved into thin slices
4 ounces membrillo, small dice
Directions:
1. Combine garlic, vinegar, and a couple of pinches of kosher salt in a

3. Whisking constantly, add olive oil in a steady stream until completely incorporated.
4. Combine watercress, almonds, 1/2 of the cheese shavings, and 1/2 of the diced membrillo in a second bowl.
5. Drizzle dressing over salad and toss to coat.
6. Divide salad among 4 plates, and garnish with remaining Manchego cheese and membrillo.
7. Serve immediately.
