Washington Blue Salad

This is an incredible salad that I have enjoyed as far back as I can remember. We are huge blue cheese fans and I make this when we have left over chicken and crave a good salad. Enjoy
Ingredients:
1/2 cup apple juice
1 cup apple peeled and chopped
1 tablespoon apple cider vinegar
1 teaspoon cornstarch
1 small head lettuce
1 small bunch red leaf lettuce
1/4 cup almonds toasted
1/2 cup cheddar cheese shredded
3/4 cup blue cheese crumbled
1/2 cup red bell pepper sliced
12 ounces boneless skinless chicken breast grilled
Directions:
1. In small saucepan combine juice, apple, vinegar and cornstarch.
2. Heat over medium heat until mixture thickens then remove and allow to cool in refrigerator.
3. While dressing is cooling clean and chop lettuce then top with cooled dressing.
4. Divide lettuce mixture evenly among 4 plates.
5. Top with equal portions of grilled and sliced chicken breast, almonds, bell pepper and cheeses.
