Warm Stir-Fried Chicken & Spinach Salad

This salad makes a great lunch! Its easy to make & is full of flavor!!
Ingredients:
9 ounces chicken breasts, cut into strips
3 tablespoons white wine vinegar
1 tablespoon olive oil
2 teaspoons dijon mustard
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper
4 cups fresh spinach, torn
10 cherry tomatoes
1/2 cup shredded carrot
1/2 cup jicama or 1/2 cup water chestnut
1/4 cup radish, sliced
Directions:
1. Whisk together; vinegar, oil, mustard, sugar, salt, paprika, & pepper. Pour into a zip lock bag, add chicken, & marinate for 2-5 hours. In a large bowl combine rest of ingredients. Drain chicken & stir fry till done. Add remaining marinade & heat till boiling. Pour hot chicken mix over salad, toss, & serve immediately.
