A great warm salad as a side for pasta or meat or can be expanded to be a main by itself
Ingredients:
1 bunch asparagus, woody stems removed, cut into 1/3rds
250g button mushrooms, quartered or sliced
vegetable oil
1/4 cup sharp sherry vinegar
1/2 cup chicken stock
3 spring onions, chopped finely
4 slices prosciutto, thinly sliced
pepper
Directions:
1. Heat vegetable oil in pan
2. Add asparagus, mushrooms and saute until tender
3. Remove and set aside
4. Add sherry vinegar and chicken stock to pan and reduce until thickened
5. Add cooked vegetables back into pan
6. Add spring onions, prosciutto and pepper to pan and warm through
