Warm Red Beans And Wild Rice Salad

One-meal salad for 4 people or as side-dish for 6, very easy and quick to assemble. Colorful, delicious and plenty of healthy ingredients, enhanced by a flavorful vinaigrette. Better when served warm.
Ingredients:
for the salad
1 can red beans (your choice), rinsed and well drained
4 ripe red tomatoes, peeled and chopped
1 cup cooked wild rice
2 cups mixed frozen vegetables, cooked
2 cups fresh greens (your choice)
for the warm vinaigrette
8 tbsp extra virgin spanish olive oil
2 garlic cloves, peeled and thinly sliced
2 tsp white wine vinegar
2 tbsp soy sauce
1 cup crumbled feta, or any goat cheese of your choice for garnish
Directions:
1. In a big bowl mix all the salad ingredients. Set aside.
2. In a small pan heat the oil on low heat, add garlic and let it cook until lightly golden. Turn the heat off and let it warm.
3. Carefully add vinegar and soy sauce to the pan. Mix well.
4. Warm the salad ingredients in the microwave for 2 minutes. Mix well.
5. Pour the warm (reheat if necessary) vinaigrette over the warmed salad and toss.
6. Season with salt and pepper.
7. Crumble the Feta cheese on top and serve immediately while warm.
