Warm Potato Salad With Scallops Chorizo And Hp Bro...

The HP brown sauce compliments all the other flavours.
Ingredients:
300g potatoes, peeled and cooked
4 tablespoons mayonnaise
2 teaspoons olive oil
1 teaspoon balsamic vinegar
1 heaped teaspoon chopped chives/coriander
pinch of salt
25g unsalted butter
2 tablespoons hp brown sauce
2 tablespoons fresh lemon juice
freshly ground black pepper
2 king scallops
50g chorizo, diced into 1cm bits
paprika
Directions:
1. slice the potatoes while still warm into 1/2cm slices.
2. Mix the mayonnaise with the oil, vinegar, chives and salt.
3. Add the potatoes and mix them together. Set aside and keep warm.
4. In a frying pan melt the butter and add the HP sauce, lemon juice and pepper.
5. Now add the scallops over a medium heat and roll them in the juices. 2-3 minutes on each side.
6. Add the chorizo and cook until warmed through. DO NOT leave it too long or it goes hard.
7. Spoon a helping of potato salad onto a plate and make a nest in the center.
8. Place the scallop and chorizo mixture in the middle.
9. Dust with paprika and serve with a coriander leaf on the top.
