Very satisfying! Can be eaten warm or cold.It never stays around very long!! This recipe is for a large batch.It takes awhile but its well worth the time.
Ingredients:
1-2 lbs. chicken breasts
1 stick butter
3 cups broccoli florets
2 cups baby carrots
2 cups cauliflower
1/2 cup chopped onion
1/2 cup chopped green scallions
1 lb. pasta, penne preferred or corkscrew
1/2 cup milk
1 cup grated parmesan/romano cheese
fresh or dried herbs- 1 tablespoon each-parsley,basil, oregano,garlic/pepper-more if desired to taste
salt and pepper to taste
Directions:
1. Saute chicken breasts and onions (both) in 2 tablespoons butter.When cooked and cooled,cut into cubes and set aside
2. Steam broccoli, carrots and cauliflower until crisp tender,drain and set aside
3. Boil pasta ala dente.Drain and set aside.
4. In a large pan,melt rest of butter stick with milk. Add pasta, cubed chicken breasts,all vegetables and herbs . Stir well but gently.Add salt and pepper then add the parmesan/romano cheese and gently stir again. Sprinkle with parsley to garnish.
