Awesome authentic German Potato Salad. My mom submitted it to the Chicago Tribune for a contest and won first prize! This is her mom's recipe, with a tangy, smoky flavor that is not too sweet . Best served warm.
Ingredients:
6 - 7 medium red potatoes boiled with skin on
1/3 cup cider vinegar
water
1 tsp. sugar
1 tsp. salt
1/4 ts. pepper
1 egg, slightly beaten
1/2 lb. bacon
1/2 cup chopped onion
fresh parsley
Directions:
1. Prep time includes boiling potatoes til fork tender.
2. In small bowl, mix cider vinegar with enough water to make 1/2 cup, add sugar, salt, pepper and egg.
3. Dice bacon and fry crisp.
4. Remove bacon and let drippings partially cool.
5. Add cider vinegar mixture. Stir well.
6. Add chopped onions and saute. Remove from heat.
7. Peel potatoes and slice. Add to pan, toss with chopped parsley and fried bacon. Warm through.
8. Taste. Add more salt and pepper if needed.
