Walnut Pie Pockets

These tasty little treats are something everyone loves. I came up with this recipe when I combined a couple different recipes to make this downsized Walnut Pie. You can use a different nut if you don't like walnuts.
Ingredients:
1/2 cup sugar
1/3 cup light corn syrup
3 tablespoons butter
1 large egg
3/4 cup chopped walnuts
1 teaspoon vanilla
1 pinch salt
1 -9 inch ready-made pie crust
Directions:
1. Preheat oven to 425*.
2. In medium saucepan, melt butter over low heat.
3. Mix in eggs, vanilla, sugar and corn syrup.
4. Add in salt and walnuts.
5. Bring to boil, careful not to cook the eggs.
6. Simmer for 5 minutes until thickened.
7. On lightly floured surface, roll out pie crust.
8. Cut out 3-inch circles with circle cutter.
9. Fill each circle with approximately 1 teaspoons of filling.
10. Fold the crust over and crimp edges with a fork.
11. Arrange on cookie sheet and bake for 10-12 minutes until golden brown.
12. Cool on wire rack.
