WALNUT GREEN BEANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Teak Estate in Montgomery, Texas in 1990.
Ingredients:
1 package frozen green beans
1 cup chopped fresh cilantro
1/2 cup ground walnuts lightly toasted
1/2 cup olive oil
2 tablespoons lemon juice
3 tablespoons red wine vinegar
2 cloves garlic minced and crushed
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Put beans in boiling water until bright green then drain and add cilantro.
2. Combine walnuts, olive oil, lemon juice, red wine vinegar, garlic, salt and pepper.
3. Mix well then add to green beans and toss gently before serving.
