There's almost a day's supply of heart-healthy omega-3's in each of these sweet, chewy cookies! I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
1 1/4 cups all-purpose flour
2/3 cup whole wheat flour
1/4 cup ground flax seed meal
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup packed brown sugar
3/4 cup butter, melted
1/4 cup granulated sugar
1 large egg
1 egg yolk
1 tablespoon vanilla extract
1 1/2 cups semi-sweet chocolate chips
1 cup chopped walnuts (4oz)
Directions:
1. Preheat oven to 325. Line baking sheets with parchment paper. Combine all-purpose flour, whole wheat flour, flaxseed meal, soda and salt until blended; reserve. On medium-high speed, beat brown sugar, butter and granulated sugar until smooth. Stir in egg, yolk and vanilla until blended. On low speed, gradually beat in reserved flour mixture until blended.
2. Stir in chips and walnuts. Drop by rounded tablespoonfuls, 2 apart, onto baking sheets; flatten slightly. Bake 12 minutes or until lightly browned. Cool 1 minute on baking sheets. Transfer to racks; cool.
