Easy salsa to serve over grilled chicken and greens, or try it in a wrap with light cream cheese, fresh spinach, avocado and slivered onions. Originally from Chatelaine magazine.
Ingredients:
1/2 cup walnuts, toasted and chopped
1 cup roasted red peppers, chopped
1/4 cup fresh parsley, minced
1 clove garlic, minced
2 tsp cider vinegar
1 tsp honey
1/4 tsp ground cumin
1/8 tsp cayenne
1/8 salt
Directions:
1. Combine all ingredients in a medium bowl and stir.
2. Make an hour or two ahead (if you have time) to let the flavours blend.
