Walnut and carrot toast

Ingredients:
2 slices whole wheat bread
1 teaspoon margarine
1/2 cup carrot, grated
1 tablespoon skim milk
2 egg whites
1 tablespoon fresh coriander leaves, chopped
1 tablespoon walnuts, chopped
2 spring onions, finely chopped
Directions:
1. Cut bread slices in halves.
2. Heat a pan.
3. Brush with a little oil.
4. Dip bread halves into the carrot mixture.
5. Cook in the non-stick pan until browned on both sides.
6. Serve hot.
